This recipe was inspired by one of my favourite clients as a personal trainer who gave me one a few weeks ago on her way out of the gym. She surprised me by saying they were made with Tash's Muesli Original muesli blend - like I didn't already love her enough! These balls are predominantly fats and protein so are perfect for people following a low carb/Keto diet. Enjoy them as a snack mid arvo or pre/post workout and while they're super healthy, they're also calorie dense so watch your portions and try stick to one if it's a snack. As satisfying as they are, they're so delicious you may go back for seconds.. Or thirds...
- 400g Tash's Muesli Original, blitzed quickly in a blender or food processor (you want a few chunks remaining)
- 3tbs coconut oil, melted
- 2tbs almond butter
- 2scoops vanilla WPI
- 1/4tsp cinnamon
- Pinch of sea salt
- Hemp seeds to roll (optional), can substitute coconut, LSA or finely chopped nuts
Combine all ingredients except the hemp seeds, using your hands until the mixture sticks together. Roughly shape into balls in your hands (you won't be able to roll it), each ball should be about 2cm in diameter. Roll each ball in the hemp seeds before placing on a plate and putting in the fridge to set for about 30min. Store in the fridge in an airtight container or cling wrapped, but they're best eaten at room temp. Makes about 12 balls.
