I honestly can't remember what made me make these... Most likely a random cookie craving with no healthy options in the house. Either way I'm happy I did because they're delicious! And so ridiculously easy with only 3 ingredients - unless you decide to make your own chocolate. OR only 2 ingredients if you decide to go without chocolate altogether.
So, are you ready for the exhaustive ingredient list???
- 400g bag Tash's Muesli Granola
- 125g (1/3can) Reduced Sugar Sweetened Condensed Milk
- 45g Dark Cooking Chocolate (I used 2 rows of Plaistowe 70% Cocoa)
Preheat your oven to 160 degrees fan-forced and line an oven tray with baking paper. In a large mixing bowl combine Tash's Muesli Granola with the condensed milk and gently mix until everything is well coated and sticky.
Using a tablespoon put lumps of the mixture onto your lined baking tray, making sure to push in any stray bits that fall off the lumped mixture. Repeat this until all the mixture is on the baking tray in cookies and flatten them slightly if you like with the back of your spoon. Don't freak out if the cookies are loose and crumbly on the tray, they firm up when cooling after baking.
Pop your tray into the oven for 8 minutes or until the cookies turn golden. Take them out and allow them to cool on the tray for 20 minutes. When the cookies have cooled, break up your chocolate into even squares and melt them as per packet instructions.
As soon as your chocolate has melted, dip a tablespoon into it then use it to drizzle over your cookies in a slow zig-zag motion. You can do this per cookie or put them close together in a row and do it per row. Once finished, place your tray in the fridge for the cookies to set for about 20 minutes and they'll be good to go!
It should make around 12 cookies and last about 2 weeks if stored in an airtight container in the fridge. Enjoy :)
